The innovative All-Clad G5 range has achieved a remarkable feat: It has the quick, even heat responsiveness of a five-layered metal pan, but the lighter weight of a three-layered metal pan. The secret to its success is a disc of graphite at the base of a pan, sandwiched within its core layer of aluminium, which provides even heating from base to edge. The dappled effect you see on the interior of the pan comes from the graphite, which like copper heats up surprisingly fast, and responds to temperature changes in an instant. The heat spreads evenly, eliminating hot spots the probable cause of patchy browning and food sticking to pans. As a result, All-Clad G5 pans are a breeze to clean. These stainless steel pans have curved rims for drip-free pouring, and contoured handles for comfort; larger sizes include secondary helper handles. These workhorses will sear meat, slow-cook stews, toss vegetables, and simmer sauces, even delicate ones like Hollandaise or beurre blanc.
