The WSTHOF Classic Ikon 6″ Flexible Fillet Knife’s extra-flexible blade was designed for easy, nimble, wafer-thin slicing, especially when it comes to more delicate tasks such as boning or skinning tender fish fillets. The Flexible Fillet Knife’s special talents also include peeling fruits and vegetables and boning smaller cuts of meat, such as chicken legs.
